APPLE NACHOS

Yield
18 servings. Serving size = 1/4 cup apple mixture and 6 cinnamon chips
Ingredients:
1 cup brown sugar
1/3 cup sugar
1 cup apple juice or apple cider
3 tablespoons quick-cooking tapioca
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup golden raisins
1/4 cup sweetened dried cranberries
8 Granny Smith apples, peeled
For chips:
18 flour tortillas, 6-inch
Water (in a spray bottle)
1/3 cup sugar
5 teaspoons ground cinnamon
Directions:
In Saladmaster Multi-Purpose 5 quart Roaster (without insert), combine brown sugar, 1/3 cup sugar, apple juice or cider, tapioca, 1 1/4 teaspoon cinnamon, nutmeg, cloves, raisins and cranberries.
Shred apples with #3 food processor blade. Blend into sugar mixture. Cook, covered, at 230 degrees F, 30 minutes or until apples are tender and mixture is thick, stirring occasionally.
Meanwhile, preheat oven to 350 degrees F. Cut each tortilla into 6 wedges. Place in single layer on baking sheets. Spray very lightly with water. (Or wet fingertips lightly with dab tortillas with water.)
In a small bowl, combine remaining 1/3 cup sugar and 5 teaspoons cinnamon. Sprinkle tortillas with 1/2 of this mixture. Bake until 6-7 minutes.
Remove baking sheet from oven. Turn tortillas over. Spray very lightly with water and sprinkle with remaining sugar and cinnamon mixture. Bake until light brown, approximately 6-7 minutes. Cool.
To serve, place 1/4 cup apple mixture on a plate or in a small bowl and surround with 6 cinnamon chips. Apple mixture may also be spooned over chips.
